Monday will be a busy day and I am planning to make weeknight enchiladas. I got the recipe from the Easy Weeknight Favorites cookbook from Southern Living. The linked website is the exact recipe.
To make tomorrow's meal preparation easier and faster, I cooked the onion and ground beef with the tomato soup and enchilada sauce. That mixture is sitting in my refrigerator. Tomorrow, all I have to do is assemble the enchiladas and bake.
