Dinner in the Freezer

I did not do a good job planning my meals for this week and I knew that as the week began. Add to that, I did not feel well. Luckily, a few weeks ago I made Ricotta Pies in a puffed pastry. They were in the freezer, just waiting for an evening to be eaten. Soup, salad, and ricotta pies; and plenty of rest.

  2. Yes, I do have a recipe. It is from the book "New Food Fast" by Donna Hay. Here it is:

    8 oz spinach leaves (I used frozen, chopped)
    10 oz ricotta cheese
    1 egg
    1/4 cup Parmesan
    2T chopped dill
    black pepper
    2 sheets puff pastry (frozen)

    Preheat oven to 425. Either cook or defrost the spinack. Drain and squeeze all moisture out. Mix the spinach with the ricotta, egg, Parmesan, dill and pepper.

    Cut each pastry sheet in half. Place the filling on one half of each piece and fold over, pressing edges together. (I made mine smaller, so suit your own taste.)

    Place on a baking sheet lined with parchment and bake for 15 minutes. I then cooled the pies and froze them. They warmed nicely in the oven.
